Ingredients for making Sweet Corn Soup with Paneer

The Basics

  • Sweet corn: This recipe can be made with either fresh or frozen corn. I used sweet corn kernels for this recipe.
  • Veggie stock: Since this easy soup cooks quickly, I like to use Vegetable stock for maximum flavor. Feel free to use other stocks or just water for sweet corn soup. You have complete control over it.
  • Ginger
  • Garlic
  • Salt: To taste
  • Turmeric power: For flavor and color in the dish.
  • Cornstarch: To bring thickness of the soup.

For Paneer and Toppings

  • Paneer(Indian cottage cheese): Paneer is frequently utilized in northern Indian cuisine, as well as those of other neighboring nations. Being a cheese, paneer shares several characteristics with other fresh cheeses, such as cottage cheese and ricotta. It tastes creamy and has a beautiful texture. These days, paneer is available in most of the departmental stores all across the globe.
  • Neutral oil: For cooking the paneer, shallow frying the paneer. I am using sunflower oil, any neutral oil will work.
  • Salt & water: Generally paneer is unsalted. Resting paneer in salt water for couple of minutes will soften and it’s great for cooking process and uplift the taste of paneer.

  • Coriander/Cilantro: Adds brightness and freshness.
  • White pepper: Compared to black pepper, its flavor is gentler, less complex, and offers a subtler earthiness and spice.
  • Sesame oil: For the lovely flavor of sesame. Use toasted sesame and the combination is superb!!!!

How to Make Sweet Corn Soup with Paneer?

The recipe is very simple and can be made in just 15-20 minutes. Here’s the step-by-step guide to make the wonderful dish.

Heat the wok or pan, put veggie stock, followed by ginger, garlic, minced corn kernels and regular corn kernels and stir it properly. Let it cook for couple of minutes and then add turmeric powder for color and salt to taste. Bring to boil, turn down the heat and stir occasionally.

In a separate bowl blend the cornstarch with a tablespoon of water. Gently pour the solutions into the pan or wok and stir it properly.

After adding cornstarch mix, cook for few minutes, then transfer sweet corn soup to another bowl for to cool down for little bit.

Cut the paneer, place it on the bowl, sprinkle salt and pour water and let it rest for 5-10 minutes. Drain the water and dry the paneer chunks using paper towel. Add oil to the pan and shallow fry the paneer until it turns golden brown on both sides.

Assemble your favorite dish by putting shallow fried paneer chunks in the middle, stacked one by one on top. Pour corn soup into the bowl, sprinkle white pepper powder and drizzle sesame oil on the top. Finish it with some chopped cilantro and enjoy your dish!!

Instruction for Freezing

Soup seasoning lasts all year long, regardless of weather. The good news is that sweet corn soup freezes nicely, if you think that soup should be only enjoyed during colder months.

To freeze, cool the soup, then put it in freezer-safe ziplock bags or souped cubes, chill it throughly in the fridge, and then put it in the fridge.(Note: Only freeze the sweet corn soup, not the Paneer)

Before serving , cook the paneer as I instructed, reheat the sweet corn soup over the stove or in the microwave and serve it.

  1. Sweet corn soup

    1. Prepare all the ingredients ready. 
    2. Cook veggie stock in pan or wok, add ginger, garlic, minced corn kernels, regular corn kernels, turmeric powder and salt. Stir it occasionally.
    3.  Blend cornstarch with water and pour it into the wok and stir it properly.
    4.  Bring to boil and transfer sweet corn soup another bowl to cool down.

    1. Cut paneer in bite size pieces, sprinkle salt and pour water  and let it rest for 5-10 minutes. Drain water and dry paneer using paper towel.
    2. Add oil to wok and shallow fry paneer cubes until golden brown on both sides.

    Add chopped fresh cilantro(coriander), a drizzle of sesame oil and pinch of crushed white pepper. Enjoy the dish with your family and friends.

Note

You can use either fresh or frozen corn for this recipe.

Do not over cook paneer, it will be hard and chewy.
